Pljukanci are hand-rolled Istrian pasta, prepared for generations according to traditional recipes. Their slightly irregular shape and firm texture are ideal for rich sauces – which is exactly why they absorb the creamy sauce of truffle, olive oil and prawns so well.
For Pljukanci Oli Mare we use fresh Adriatic prawns and truffles from the forests of Motovun. The pasta is finished briefly in the sauce to keep its bite, and freshly grated truffle is added at the very end, giving the dish its unmistakable aroma.
